HAPPY NEW YEAR
Great recipe for Paleo Jambalaya from Marks Daily Apple.
2 large chicken breasts, cut into bite-size pieces
1 lb andouille sausage, cut into ¼ inch thick slices
1/4 cup olive oil
1 cup onion, chopped
1 large bell pepper, chopped
2 cloves of garlic, minced crushed
1 14.5 oz can diced tomatoes, undrained
1.5 cups chicken stock
1/2 tsp dried leaf thyme
1 tbsp parsley (fresh is preferable, but dried will do in a pinch!)
1 tsp chili powder
1 large head of cauliflower
2 cups shelled, deveined and cleaned shrimp
Salt and pepper to taste
Method:
In a large skillet, heat the olive oil and lightly cook the sausage and chicken over medium heat. Once golden, add onion, bell pepper and garlic and sauté until onion becomes translucent. Transfer items from the frying pan into a large pot. Add diced tomatoes, chicken broth, thyme, parsley and chili powder and bring to a simmer. While the mixture is simmering (you’ll want to let it go for about 20 minutes, uncovered, stirring occasionally), place the cauliflower in a food processor and shred until it becomes the consistency of rice. Add the cauliflower “rice” to the mixture and simmer for another 15 minutes until tender. Add shrimp and simmer for another 5 minutes. Add salt and pepper to taste and adjust other spices as needed. Serve piping hot. Serves 6.

Looks good! I love cauliflower as a replacement for rice and potatoes.
Im going to try this today. I bet i could even get my daughter to eat it….looks good!!! We need to share recipes more!
I made it last night and it was good, reheated it this afternoon and it was even better.
funny I was thinking about a recipe exchange thingy today….I just made “paleo” curry chicken aka: 1K calorie chicken
I’m interested in more recipes, for sure.
Well John ask jd about his favorite breakfast… Cold pork tenderloin and berries
On occasion I’ve been known to just take leftover ground beef (cooked the night before) and eat it for breakfast. I ate so many eggs for so long I just got sick of ’em. Though a good omelet with various cuts of dead pig in it I can be convinced to eat almost every day if it were available.
I could eat ground beef in an omelet for just about any meal. Cold pork tenderloin and berries? Sounds like a paleo breakfast for a bachelor, like myself.
Sound good Sherry? 🙂
Happy New Year everyone!!!
What happened to me was…I was in a hurry and just grabbed some meat to bring with me one day and I just ended up liking it. Now I can eat any meat cold for breakfast. More options = less opportunity to come up with a bs excuse for why you didnt eat a healthy breakfast. Breakfast doesnt have to be ‘breakfast food’.
Hey, quick and easy is key for breakfast in my book.
